Cosi was born from a desire to create a life outside of traditional restaurant kitchens and culture. From a willingness to explore what it truly means to come together and share an experience.

For me, food has always been about exploring produce and culture. It’s taken me from open fires in Patagonia to retreats in nature, and into restaurants around the world. Through my experiences I’ve learned that the most meaningful meals are never just about what’s on the plate.

Founded by Stacey Tarleton, Cosi brings together decades of experience in global cuisine, wellness-focused cooking, and native Australian ingredients. From cooking over open flames to working with wild, seasonal produce, Stacey’s approach is grounded, heartfelt, and always guided by what the land is offering.

We are always striving to use the best produce available - spray free, organic, local, and seasonal ingredients to create meals that feel nourishing, soulful, and vibrant. Whether it’s a multi-day retreat or a private dinner in your home, Cosi is about more than food—it’s about restoring connection: to nature, to each other, and to ourselves.
